Ingredients
- 1 tbsp olive oil
- 3 tbsp garlic, minced
- 12 oz marinated artichoke hearts, drained and chopped
- 4 cups baby spinach, diced
- ½ cup plant-based mayo
- 8 oz plant-based cream cheese
- ½ tsp garlic powder
- ½ cup plant-based Parmesan
- salt and pepper, to taste
- tortilla chips, for dipping
Directions
- Preheat the oven to 400ºF.
- Heat the olive oil in a large sauté pan over medium heat. Add the garlic and sauté for 1 minute, stirring frequently.
- Add the artichoke hearts and spinach, sauté until the spinach is wilted.
- Add the cream cheese, mayo, garlic powder, salt, and pepper. Stir to combine.
- Transfer to a baking dish, top with Parmesan, and bake for 15 minutes.
- Turn the oven to broil and cook for an additional 3–5 minutes, or until the top begins to brown and crisp.
- Allow to cool for 3 minutes. Serve with tortilla chips.
